  • 100 g (3.5 oz) sheep's cheese or feta, crumbled
  • 50 g (3.5 tbsp) butter, softened
  • 1 small onion, very finely chopped
  • 1 tbsp sweet paprika
  • 1/2 tsp caraway seeds, crushed
  • 1 tsp mustard
  • Salt, to taste
  • Chives, to garnish

Method

  1. Mash the cheeses and butter together until mostly smooth.
  2. Stir in the onion, paprika, caraway and mustard.
  3. Season with salt and mix thoroughly.
  4. Chill at least 1 hour to let flavours meld.
  5. Garnish with chives and serve with fresh bread and vegetables.
