Ingredients

  • 200 g (7 oz) smoked herring fillets
  • 2 tbsp vegetable oil
  • 1 small onion, thinly sliced
  • 1/2 sweet pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 Scotch bonnet pepper, minced
  • 1 tbsp lime juice
  • 1 tbsp chopped fresh parsley
  • Salt and pepper, to taste
  • Crackers or bread, for serving

Method

  1. Poach the smoked herring in simmering water for 8-10 minutes to soften and reduce excess saltiness.
  2. Drain, cool slightly, then remove skin and bones and shred the flesh finely with a fork.
  3. Heat oil in a skillet over medium heat and sauté onion, sweet pepper, garlic, and Scotch bonnet until softened, about 5 minutes.
  4. Add the shredded herring to the skillet and cook 3-4 minutes, stirring to combine with the vegetables.
  5. Remove from heat and stir in lime juice and parsley. Season with salt and pepper as needed (go easy on salt, as the herring is already salty).
  6. Serve warm or at room temperature, piled onto crackers or slices of bread.
