Ingredients
- 150 g (5 oz) fresh ginger, peeled
- 1.5 litres (6 cups) water
- 150 g (3/4 cup) granulated sugar
- 30 ml (2 tbsp) lime juice
- 5g (small handful) fresh mint leaves (optional)
Method
- Roughly chop the ginger and blend with 500 ml (2 cups) of the water until finely pureed.
- Strain the mixture through a fine sieve into a pitcher, pressing to extract all the liquid.
- Stir in the sugar until dissolved.
- Add the remaining water and lime juice, stirring well.
- Chill for at least 1 hour, adding mint leaves if using.
- Serve cold over ice.
