  • 150 g (3/4 cup) brown sugar

  • 60 g (4 tbsp) butter, melted
  • 1 tsp (1 tsp) cinnamon, ground
  • 1/2 tsp (1/2 tsp) nutmeg, freshly grated
  • 5 ml (1 tsp) vanilla essence
  • 50 g (1/3 cup) raisins
  • A pinch (a pinch) salt

Method

  1. Preheat oven to 180°C (350°F) and grease a baking dish.
  2. Combine grated sweet potato, coconut milk, brown sugar, flour, melted butter, cinnamon, nutmeg, vanilla, raisins and salt in a large bowl, mixing thoroughly.
  3. Pour the mixture into the prepared baking dish, spreading evenly.
  4. Bake 60–70 minutes until firm, set in the centre and golden brown on top.
  5. Cool at least 20 minutes before slicing into squares.
