Ingredients
- 300 ml (1 1/4 cups) whole milk
- 300 ml (1 1/4 cups) heavy cream
- 120 g (3/5 cup) granulated sugar
- 4 (4) egg yolks
- 1 tsp (1 tsp) whole nutmeg, freshly grated
- 5 ml (1 tsp) vanilla essence
- A pinch (a pinch) pinch of salt
Method
- Heat milk and cream in a saucepan over medium heat until just simmering; remove from heat.
- Whisk egg yolks and sugar together until pale and slightly thickened.
- Slowly pour the hot milk mixture into the yolks, whisking constantly to temper.
- Return mixture to the saucepan, cook over low heat, stirring constantly, until it coats the back of a spoon (about 8–10 minutes). Do not boil.
- Strain through a fine sieve, stir in grated nutmeg, vanilla and salt.
- Chill the custard fully in the refrigerator, at least 4 hours or overnight.
- Churn in an ice cream maker according to manufacturer instructions, or freeze in a shallow container, stirring every 30 minutes until firm.
