Ingredients

  • 1 medium (about 800 g) (1 medium (about 1.75 lb)) breadfruit, peeled and cored
  • 120 g (1/2 cup) mayonnaise
  • 1 stalk (1 stalk) celery, finely chopped
  • 1/2 (1/2) onion, finely chopped
  • 1/2 (1/2) sweet pepper, finely chopped
  • 2 (2) boiled egg, chopped
  • 15 ml (1 tbsp) lime juice
  • To taste (to taste) salt and black pepper
  • 2 tbsp (2 tbsp) fresh parsley, chopped

Method

  1. Boil whole peeled breadfruit in salted water 30–40 minutes until fork-tender.
  2. Drain, cool slightly, and dice into bite-sized cubes.
  3. In a large bowl, combine breadfruit, celery, onion, sweet pepper and boiled egg.
  4. Fold in mayonnaise and lime juice, seasoning with salt and pepper.
  5. Garnish with chopped parsley and chill 30 minutes before serving.
