  • 250 g (9 oz) kefalotyri or graviera cheese, sliced 1.5 cm thick
  • 40 g (1/3 cup) all-purpose flour
  • 30 ml (2 tbsp) olive oil
  • 1 (1) lemon, cut into wedges

Method

  1. Pat cheese slices dry with kitchen paper.
  2. Dredge each slice lightly in flour, shaking off excess.
  3. Heat olive oil in a frying pan over medium-high heat.
  4. Fry cheese for 1–2 minutes per side until golden and just beginning to soften, but not melting through.
  5. Remove immediately and place on a serving plate.
  6. Squeeze fresh lemon juice over the top just before serving.
