  • 1/2 tsp salt
  • 1 tbsp sugar (optional)
  • Vegetable oil, for deep-frying

Method

  1. In a bowl, combine the grated ginger, cayenne pepper, cloves, salt and sugar with a splash of water to form a marinade paste.
  2. Toss the plantain cubes in the marinade, ensuring each piece is well coated, and let sit for 15-20 minutes.
  3. Heat oil to 175°C (350°F) in a deep pot.
  4. Fry the marinated plantain cubes in batches for 4-5 minutes until deeply golden and caramelised at the edges.
  5. Drain on paper towels and serve hot with roasted peanuts.
