Ingredients

  • 500 g (1 lb) goat meat or chicken, cut into pieces
  • 3 tomatoes, blended
  • 1 onion, chopped
  • 1 scotch bonnet pepper
  • 2 cloves garlic
  • 1 tsp ground ginger
  • 1 litre (4 cups) water or stock
  • Salt, to taste
  • 1 tbsp ground crayfish (optional)

Method

  1. Place the meat in a pot with onion, garlic, ginger and a little salt, and cook over medium heat for 15 minutes to release juices.
  2. Add the water or stock and bring to a boil, skimming any foam.
  3. Blend the tomatoes and scotch bonnet together and add to the pot.
  4. Simmer for 25-30 minutes until the meat is tender and the broth is fragrant.
  5. Stir in ground crayfish if using, and adjust salt to taste.
  6. Serve hot with fufu, rice balls or on its own.
