Ingredients
- 300 g (2.4 cups) flour
- 7 g (2 tsp) instant yeast
- 60 g (1/4 cup) sugar
- 1 egg
- 80 ml (1/3 cup) warm milk
- 60 g (1/4 cup) butter, softened
- Pinch of salt
- For the topping: 80 g (1/3 cup) butter, 80 g (1/3 cup) sugar, 3 tbsp honey, 150 g (1.5 cups) sliced almonds, 2 tbsp cream
- For the filling: 500 ml (2 cups) milk, 2 egg yolks, 50 g (1/4 cup) sugar, 30 g (1/4 cup) cornstarch, 1 tsp vanilla extract, 200 ml (3/4 cup) whipped cream
Method
- Combine flour, yeast, sugar, egg, warm milk, butter and salt into a smooth dough; knead for 8 minutes, then let rise for 1 hour until doubled.
- Press the dough into a greased round cake pan and let rise a further 20 minutes.
- For the topping, melt butter, sugar, honey and cream in a saucepan, stir in the almonds, and spread evenly over the dough.
- Bake at 180°C (350°F) for 25-30 minutes until golden and the topping is caramelized. Cool completely.
- For the filling, whisk egg yolks, sugar and cornstarch, then temper with hot milk and vanilla; cook over medium heat, whisking constantly, until thickened. Cool completely, then fold in whipped cream.
- Slice the cooled cake horizontally in half and fill generously with the custard cream before reassembling.
