Ingredients
- 1 whole chicken (about 1.5 kg / 3.3 lb), or 1 kg bone-in thighs
- 2 litres (8 cups) water
- 1 large onion, finely chopped
- 3 large eggs
- 2 tbsp white wine vinegar or lemon juice
- 1 tbsp plain flour
- 2 tbsp fresh coriander, chopped
- 1 tsp ground coriander seed
- Salt and black pepper, to taste
Method
- Place the chicken in a pot with water, bring to a boil, skim off foam, then simmer covered for 45-60 minutes until the meat is falling off the bone.
- Remove the chicken, shred the meat, and discard the bones and skin; strain and reserve the broth.
- In the same pot, sauté the onion in a little of the reserved chicken fat until soft, about 8 minutes.
- Whisk the flour into the vinegar until smooth, then whisk in the eggs.
- Return the broth to a gentle simmer and slowly ladle a cup of hot broth into the egg mixture, whisking constantly to temper it.
- Pour the tempered egg mixture back into the pot in a thin stream, stirring constantly over low heat until the soup thickens slightly; do not boil.
- Return the shredded chicken to the pot, season with ground coriander, salt and pepper, and warm through.
- Stir in fresh coriander and serve immediately.
