Ingredients
- 500g (1 lb) floury potatoes, peeled and cubed
- 25g (2 tbsp) butter, plus extra for frying
- 100g (3/4 cup) plain flour, plus extra for dusting
- 1/2 tsp fine salt
- 1/4 tsp baking powder
Method
- Boil the potatoes in salted water for 15-18 minutes until tender, then drain well.
- Mash the potatoes with the butter until smooth and leave to cool slightly.
- Sift the flour, salt and baking powder into the mash and bring together into a soft dough.
- Turn onto a floured surface and roll out to about 5mm (1/4 in) thick.
- Cut into rounds or triangles and cook on a hot, dry griddle for 2-3 minutes per side until golden.
