  • 7 g (2 1/4 tsp) instant yeast
  • 50 g (1/4 cup) sugar
  • 250 ml (1 cup) warm milk
  • 50 g (3 1/2 tbsp) butter, softened
  • 1 tsp mixed spice
  • 250 g (1 1/2 cups) mixed dried fruit (raisins, sultanas, currants)
  • 1 egg, beaten, for glazing

Method

  1. Dissolve yeast and a pinch of sugar in warm milk and let stand for 10 minutes until foamy.
  2. Combine flour, remaining sugar and mixed spice in a large bowl, then add the yeast mixture and softened butter, kneading into a smooth dough.
  3. Knead in the mixed dried fruit until evenly distributed.
  4. Cover and let rise in a warm place for about 1 hour until doubled.
  5. Shape into a loaf tin, cover, and let rise again for 30 minutes.
  6. Brush with beaten egg and bake at 180°C (350°F) for 35–40 minutes until golden and cooked through; cool before slicing.
