Ingredients
- 500 g (1 lb) ground lamb
- 1 onion, chopped
- 2 carrots, diced
- 2 tbsp tomato paste
- 250 ml (1 cup) beef or lamb stock
- 1 tbsp Worcestershire sauce
- 1 kg (2 lb) potatoes, peeled and cubed
- 50 g (3 1/2 tbsp) butter
- 100 ml (1/3 cup) milk
Method
- Brown the ground lamb in a large frying pan over medium-high heat, breaking it up as it cooks.
- Add onion and carrot and cook for 5 minutes until softened.
- Stir in tomato paste, stock and Worcestershire sauce, then simmer for 20 minutes until thickened.
- Meanwhile, boil the potatoes until tender, about 15–18 minutes; drain well.
- Mash the potatoes with butter and milk until smooth, and season with salt and pepper.
- Spread the meat mixture into a baking dish, top evenly with mashed potato, and bake at 200°C (400°F) for 20–25 minutes until golden on top.
