Masala Chai

Ingredients
- 500 ml (2 cups) water
- 4 green cardamom pods, lightly crushed
- 1 cinnamon stick
- 3 cloves
- 1 tsp fresh ginger, grated
- 3 tsp loose black tea leaves (or 3 tea bags)
- 400 ml (1.75 cups) whole milk
- 2-3 tbsp sugar, or to taste
Method
- Combine the water, cardamom, cinnamon, cloves and ginger in a saucepan. Bring to a boil and simmer for 5 minutes to infuse the spices.
- Add the tea leaves and simmer for 2 minutes.
- Pour in the milk and sugar, and bring back to a gentle boil, watching closely to prevent it boiling over.
- Reduce heat and simmer for 2-3 minutes until well infused and the colour deepens.
- Strain into cups or a teapot and serve hot.

Storage: Best served fresh. Leftover chai can be refrigerated for up to 1 day and gently reheated.
Reheating: Reheat gently in a saucepan over low heat, stirring, until hot — avoid boiling vigorously to preserve flavour.
