Ingredients

  • 1/2 medium head white cabbage, very finely shredded
  • 2 carrots, grated
  • 1 red bell pepper, thinly sliced
  • 2 celery stalks, thinly sliced
  • 1 tsp salt, for salting the cabbage
  • 60 ml (1/4 cup) extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1/2 tsp dried oregano
  • Black pepper to taste

Method

  1. Place the finely shredded cabbage in a colander set over a bowl, sprinkle with the salt, and toss well.
  2. Let the salted cabbage sit for 45 minutes to 1 hour, tossing occasionally, until it softens and releases liquid.
  3. Squeeze the cabbage firmly by handfuls to remove as much liquid as possible, then transfer to a large mixing bowl.
  4. Add the grated carrots, sliced red pepper, and celery to the bowl.
  5. Whisk together the olive oil, vinegar, oregano, and black pepper, then pour over the vegetables.
  6. Toss well to combine and let sit for 10 minutes before serving so the flavors meld.
