Smoky Eggplant Dip

Ingredients
- 2 large eggplants (about 900 g / 2 lb total)
- 2 garlic cloves, minced
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 small red onion, very finely diced
- 2 tbsp fresh parsley, chopped Salt and black pepperSalt and black pepperto taste
Method
- Preheat the oven to 220°C (425°F). Prick the eggplants all over with a fork and place on a baking sheet.
- Roast for 30-35 minutes, turning once, until the skins are charred and the flesh is completely soft and collapsed.
- Let the eggplants cool slightly, then halve and scoop the flesh into a colander. Let drain for 10 minutes to remove excess liquid, discarding the skins.
- Roughly chop or mash the drained eggplant flesh with a fork until mostly smooth but still with some texture.
- Stir in the garlic, olive oil, lemon juice, red onion, and half the parsley. Season with salt and pepper.
- Transfer to a serving bowl, drizzle with a little extra olive oil, and scatter with the remaining parsley before serving.

roasted vegetables, olive oil, garlic, and lemon rather than dairy. On Lenten days that permit oil (as opposed to the
strictest Xerophagy days), this smoky dip becomes a common opener before a fasting-friendly main course, scooped
up with bread or raw vegetables.

Storage: Store in an airtight container in the refrigerator for up to 4 days.
Reheating: Serve cold or at room temperature — this dip is not intended to be reheated.
