- 2 tbsp Apple cider vinegar
- 1 tsp Sugar
- 1/2 tsp Salt
Method
- Combine the diced beetroot, potato, carrot, apple, gherkin and red onion in a large bowl.
- Whisk together the vinegar, sugar and salt until dissolved.
- Pour the dressing over the vegetables and toss gently to coat, taking care not to crush the ingredients.
- Cover and refrigerate for at least 1 hour before serving to let the flavours meld and the beetroot colour the mixture.
