Tips: Make sure the filling is fully cooled before assembling, or it will make the pastry soggy. Crimp edges firmly to prevent filling from leaking during baking.

Variations: Deep-fry instead of baking for a more traditional roadside-stall texture. Add minced beef or lentils to the filling for variety. Already vegetarian as written; use plant-based pastry and skip egg wash for vegan.

Storage: Refrigerate baked puffs for up to 3 days.

Reheating: Reheat in the oven at 180°C (356°F) for 10 minutes to restore crispness.

FAQs:

Q: Can I make these ahead and freeze them?

A: Yes, assemble and freeze unbaked; bake from frozen, adding about 5–8 extra minutes.

Q: Are curry puffs always vegetarian?

A: Not always — meat versions are common, but the potato and pea filling is a popular vegetarian classic.
