  • 300 g (1 1/2 cups) Cooked, mashed ful bidamis (see Breakfast recipe)
  • 4 Crusty bread rolls
  • 1 Tomato, thinly sliced
  • 1 Green chili, thinly sliced
  • 1/2 small Red onion, thinly sliced
  • 1 tbsp Olive oil
  • a pinch Salt

Method

  1. Warm the mashed ful bidamis gently in a small frying pan over low heat until heated through.
  2. Split the bread rolls lengthways and lightly toast the cut sides if desired.
  3. Spread a generous layer of warm ful onto the base of each roll.
  4. Top with sliced tomato, chili and onion.
  5. Drizzle with olive oil and a pinch of salt, then close the sandwich and press gently.
  6. Serve immediately while warm.
