Ingredients

  • 250g (2 cups) plain flour
  • 200g (1 cup) sugar
  • 200ml (3/4 cup plus 1 tbsp) coconut milk
  • 150g (2/3 cup) butter, melted
  • 3 eggs
  • 100g (1 cup) desiccated coconut
  • 2 tsp baking powder
  • 1/2 tsp salt

Method

  1. Preheat the oven to 180°C (350°F) and grease and line a 20cm (8 in) cake tin.
  2. Whisk the eggs and sugar together until pale, then whisk in the melted butter and coconut milk.
  3. Fold in the flour, baking powder, salt and desiccated coconut until just combined.
  4. Pour the batter into the prepared tin and bake for 40–45 minutes until a skewer comes out clean.
  5. Cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
