Ingredients

  • 800g (1 3/4 lb) goat meat, cut into pieces
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 thumb ginger, grated
  • 1 scotch bonnet chilli, finely chopped
  • 1 tsp ground crayfish or shrimp powder
  • 1 tsp African pepper soup spice (or a mix of black pepper, calabash nutmeg and clove)
  • 1.2L (5 cups) water
  • Salt, to taste
  • 2 spring onions, sliced, to finish

Method

  1. Place the goat meat in a large pot with the onion, garlic, ginger and half the chilli. Cover with water.
  2. Bring to a boil, skim any foam, then reduce to a simmer and cook for 45 minutes until the meat is tender.
  3. Stir in the crayfish powder, pepper soup spice and remaining chilli. Simmer for a further 10–15 minutes.
  4. Season with salt to taste, ladle into bowls, and top with sliced spring onion.
