- 60 ml (1/4 cup) Sofrito
- 150 g (5 oz) Smoked ham hock or bacon (optional)
- 150 g (5 oz) Auyama (calabaza squash), chunked
- 1 Bay leaf
- to taste Salt
- 1.5 l (6 cups) Vegetable stock or water
Method
- Drain soaked beans and add to a pot with stock, bay leaf and ham hock if using.
- Simmer 1 hour until beans are tender.
- Add sofrito and squash, simmering 15 more minutes until the squash softens and slightly thickens the broth.
- Remove ham hock, shred any meat and return to the pot; discard bone.
- Season with salt and serve hot, optionally blending a portion for a creamier texture.
