Sambuussa (Spiced Meat Pastries)

Ingredients
- 20 sheets Spring roll or samosa pastry sheets
- 300 g Ground beef or lamb
- 1 medium Onion, finely diced
- 2 cloves Garlic, minced
- 1 Green chilli, finely chopped
- 3g Ground cumin
- 2g Ground coriander
- 500 ml Vegetable oil (for filling and frying)
- to taste Salt and black pepper
- 30 g Flour paste (flour + water), for sealing
Method
- Heat 1 tbsp oil in a frying pan and sauté the onion until soft.
- Add the garlic, chilli, cumin and coriander, cooking for 1 minute until fragrant.
- Add the ground meat, breaking it up well, and cook through until browned. Season with salt and pepper. Set aside to cool completely.
- Lay out a pastry strip and place a spoonful of filling near one end. Fold into a triangle shape, tucking as you go, sealing the final edge with flour paste.
- Repeat with remaining pastry and filling.
- Heat oil in a deep pot to 180°C (350°F) and fry the sambuussa in batches for 2-3 minutes until golden and crisp.
- Drain on paper towels and serve hot with a spicy pepper sauce.
