Ingredients

  • - 3 large eggs

Method

  1. Preheat the oven to 165C (325F). Grease a loaf tin or bundt tin and line the base with parchment paper.
  2. In a large bowl, whisk the eggs, honey and sugar together until well combined.
  3. Whisk in the coffee, oil and orange juice.
  4. In a separate bowl, sift together the flour, baking powder, baking soda, cinnamon, cloves, ginger and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined - do not overmix.
  6. Pour the batter into the prepared tin and bake for 50-55 minutes, until a skewer inserted into the centre comes out clean.
  7. Cool in the tin for 15 minutes, then turn out onto a wire rack to cool completely before slicing.
