Ingredients

  • - 4 medium beetroots, trimmed
  • - 2 leeks, sliced
  • - 45 ml olive oil (3 tbsp olive oil)
  • - 30 ml white wine vinegar (2 tbsp white wine vinegar)
  • - 1/2 tsp ground cumin
  • - 1 tbsp fresh coriander, chopped
  • - Salt, to taste

Method

  1. Boil the beetroots whole in salted water for 30-35 minutes, until tender when pierced with a knife.
  2. Meanwhile, boil or steam the sliced leeks for 5 minutes, until just tender, then drain.
  3. Once cool enough to handle, peel the beetroots and cut into wedges.
  4. Combine the beetroot and leeks in a mixing bowl.
  5. Whisk together the olive oil, vinegar and cumin, pour over the vegetables, toss gently, scatter with coriander and season with salt.
